Sunday morning- a day of rest and rejuvenation. Or so I thought. As I slowly opened my eyes, I realized I had overslept. The weight of the previous day's workload had taken its toll, and I had stayed up later than intended. My plan to wake up early and cook a hearty Sunday breakfast had been foiled.
To make matters worse, my family was still away on Easter holidays, and I was alone to tackle the day's chores. I had initially thought of cooking rice and beans, a classic Nigerian Sunday breakfast. But as I looked at the time, I knew I had to adjust my plans. Household chores and cleaning wouldn't do themselves, and I still needed to get ready for church.

With a sense of urgency, I rushed to the morning market to grab some essentials. I settled on buying some chicken parts and other ingredients to make a quick and delicious chicken pepper soup. It wouldn't be my traditional Sunday breakfast, but it would have to do.

As I hurried back home, the aroma of fresh peppers and spices filled my senses, and my stomach growled in anticipation. I quickly got to work, chopping, sauteing, and simmering the ingredients into a flavorful pot of goodness.

Before long, my chicken pepper soup was ready. I sat down to enjoy my impromptu Sunday breakfast, savoring the spicy kick and the tender chicken. It may not have been my original plan, but it was the perfect way to start a busy Sunday.
As I ate, I felt grateful for the flexibility and resilience that came with living alone. It wasn't always easy, but moments like these reminded me that even the best-laid plans could be adjusted to make way for something just as wonderful. And as I headed out to church, I felt refreshed and ready to take on the day.
