INTRODUCTION

It is quite interesting to participate in yet, another food diary game contest. If not for anything else, I would be representing the male folks who in some areas, are believed to not being friendly in the kitchen. This contest would showcase the cooking ability of different people from different cultures around the globe.

Once in a week, I try as much as possible to find myself in the kitchen. Going through the rigorous processes of preparing food is fun to engage in. Although sometimes, there may not be time to go into the kitchen to do the task of food preparation. It is an experience one should have because of how fun it is. This is why I would like to be participating in this contest hence, I here participate and present my contest.

HOW I PREPARED A BITTER LEAF SOUP

Before the washing

Bitter leaf is a plant commonly found in west African countries like Nigeria. It could be planted or found in the bush or forest, and grow well along the water ways. It is a green leaf plant which grows between 2 to 6.5cm in height. The leaves of the plant is useful for preparing soup. When combined with ingreients that are used ti make a soup with it, it tastes delicious.

The water from the biiter leaf is medicinal as it could be useful in curing diabetes and malaria. There are other benefits which consuming this leaf, gives to the body.

After the washing

I first plucked the leaves as you could see in the picture. I washed the leaves and then started to sqeez it or washing in it. The purpose of washing it is to ensure that the bitter taste is removed. The washing takes about 30 to 45 minuites to remove the bitter taste. During the washing, some lathers form which does not allow you to hold it together and firmly. In order to be able to remove the lathers that form which does not allow you to hold hold them together, add some little drops oil palm into it. As you add the oil palm, the lathers that form starts to disappear. While washing it, you could check if the bitter taste is gone at 15 minuites interval.

Now after the washing, I start to prepare other ingredients that would be used to cook the food. The igredients that used in making this bitter leaf soup include:

  • Crayfish
  • Dry pepper
  • Sockfish
  • Dry fish
  • Oil palm
  • Stock cubes
  • Meat
  • Salt
  • Edible Melon
    These ingredients cotains the needed nutrients that makes the meal wholesome. As soon as I got these ingredients ready, I started cooking the food.

The nutritional facts of my bitter leaf recipe
My bitter leaf recipe contains all the nutrients that supplies the body what it requires. Below are some of the nutrients that the ingredients carry which makes the bitter leaf recipe rich to nourish the body:

  • Carbohydrates (Garri)

  • Protein(Fish, crayfish, meat)

  • Potassium(Salt)

  • A, C, E, B1 and B12(Bitter leaf)

  • Iron,zinc and fibre(Bitter leaf)

  • Pepper(Vitamin A, K, B6 and copper)

  • Palm Oil(Tocopherol, Vitamin E, Vitamin K, Fat)

  • Edible Melon (Vitamin B, C,and K. Potassium, fibre, Copper)

  • Table Salt(Sodium and chlorine)

This is part of my contribution to the food diary for this week. I hope you would try to make a soup with bitter leaf to have a delicious taste of the leaf.
