In today's post, I'll be sharing my simple recipe for draw soup, featuring okro and okpono. One of the best things about okro soup is how easy and affordable it is to make. I often cook it when I'm on a tight budget, as it's a cost-effective option that won't break the bank.

To begin, here are the ingredients I used to prepare my okro soup

  • Chicken

  • Periwinkle (shell)

  • Dried fish ( nsat iyak)

  • Okro

  • Ogbono

  • Ozuza

  • Fresh pepper

  • Red oil

  • Salt

  • Stock cube

  • Onions

Preparation

There are two common methods of preparing okro soup: the frying method and the traditional method. For my version, I opted for the frying method.

I began by washing and adding the chicken and dried fish to the pot. I then seasoned them with stock cubes, fresh peppers, onions, and salt. After that, I cooked the mixture for about 5-7 minutes, or until the meat was tender.

While the meat was cooking, I pounded the crayfish and set it aside. Next, I grated the okro using a manual grater, opting for this method instead of chopping and pounding it. I also sliced the ozuza leaves and set them aside.

Once the meat was tender, I placed an empty pot over the fire and added a small amount of red oil. I heated the oil for about 1 minute, then added the sliced onions and fried them for 30 seconds.

Earlier, I had dissolved the grounded Ogbono in hot water. I then poured the mixture into the pot.

I let it boil for 2 minutes, then added the grated okro to the pot. I stirred everything together and allowed it to steam for another 2-3 minutes.

Next, I added the pounded crayfish and stirred well. I also added the Periwinkle and allowed the mixture to boil for another 2-3 minutes.

After the 2-minute boil, I added the sliced ozuza leaves, stirred everything together, and then partially covered the pot to simmer for 1 minute.

With that, I added the final ingredient. I then turned off the gas and let the soup simmer for a bit. And that's it - my delicious okro soup was ready.
